You will work with your hands from the first minute — using a centuries-old molcajete, a blender, and fresh seasonal ingredients to create five distinct salsas, each with its own technique, history, and flavor profile. Along the way, you will learn why salsa is not a condiment in Mexico. It is a language. While you cook, you will snack on quesadillas, totopos, and chicharrón — and everything you make during the class is yours to eat and take home.
