Your experience begins in the community of San Jose Manialtepec, where your local hosts will introduce you to the ingredients, history, and cultural significance of mole in Oaxacan cuisine. You will learn about the different chilies, spices, seeds, chocolate, and traditional techniques used to create this complex and flavorful willow. Together, we will roast, grind, mix, and cook the ingredients from scratch using traditional methods passed down through generations. As the mole simmers, you will also help prepare tamales that will be served with the finished mole.
